🥒 Marrow or courgette?

Measurements They are from the same family as zucchini, pumpkins and cucumbers. There are different varieties, but they are actually the same as the zucchini, left in the plant to grow a lot.

Courgette varieties were created to produce more smaller fruits, as specific marrow varieties (such as’Tiger Cross‘E’Badger Cross‘They are created to produce less larger medanas.

The good news is that whatever the size or variety of marrow or aborts you have to deliver, this soup recipe is equally delicious!

Ingredients

Big As above, use whatever you have to handle – you will need 1 kg of meat. If you have a very thick and resistant skin, you may prefer to remove it (or pass the finished soup through a sieve). And in the same way, if the interior is very sticky with large seeds, just remove it -and discard.

CANELLINI BEA These give the soup a great increase in protein and add a rich creaminess. You can use any type of white beans – Haricot butter beans or beans are great alternatives.

Coconut milk Use complete or light fat as you prefer – you need coconut milk from a can instead of a box.

Garlic and ginger If you are in a hurry, ginger and garlic vials or garlic or folders are an excellent time.

Equipment

ONE blender It’s the easiest way to escape your cord soup to a smooth, silky puree. Without spilling in a blender, just stick to the pan and blitz. Mine is from Dualit and served me well for many years, but any good quality blender will do the job well.

Cutting Medula and Frying

Fry gently onion, garlic and ginger until softened. Chop the marrow in small cubes and add to the pan along with the curry powder. Cook for 10 to 15 minutes until the liquid is released from the marrow and cooked.

Adding beans and potatoes

Add the cannellini beans and diced potatoes, then coconut milk and vegetable broth. Cook for 10 minutes until the potato is cooked.

Add lemon juice and then go to a soft, silky puree – this can take a few minutes, continue! Taste and adjust the spice and serve.

Blitz, blitz and blitz again! The difference between beautiful soup and lacquer beat soup is a smooth and silky texture. Coconut milk, beans and potatoes will really help you with it, but make sure you really run it out -at least 2-3 minutes with a hand blender.

I like, adjust and prove it again The level of spices, seasoning and lemon-naked depends entirely on you. Be sure to continue proving and adjusting as you advance. Remember that if you are freezing the soup, some of the flavors will be slightly stuffy, then adjust according to when defrosting.

Can I freeze my marrow soup?

Absolutely! I like to freeze it in individual portions (old margarine tubs or travel containers are perfect for a single portion), then just thaw in a pan or microwave as needed.

Do I have to wear a marrow?

No – As long as you have 1 kg of meat, it can be of any pumpkin size or pumpkin varieties.

How spicy is this soup?

It depends on the type of curry powder you use – light, medium or hot choice as you prefer. Or, if you don’t want heat, Gagus Masala will give you all the flavors without being spicy.

  • Heat the oil in a large pan – as much as possible. Peel and finely peel the onion and fry gently for 2-3 minutes until it begins to soften.

  • Add garlic and ginger and keep cooking gently for another 2-3 minutes.

  • In the meantime, it appears the spinal cord or courgette. If the skin is quite difficult, you can cut it, but it is edible and this is usually not necessary. If the center is sticky with very large seeds, remove -Oe use the meat in the soup.

  • Chop the marrow in pieces of about 1 cm of square and add them to the pan along with the curry powder. Season well with salt and black pepper and cook over medium heat for 10 to 15 minutes or until the marrow releases its liquid and this has been cooked.

  • Peel the potato and pike -a cubes. Drain and rinse the canellini beans. Add the potatoes, beans, coconut milk and vegetable broth to the pan and bring to a boil.

  • Reduce to boil gently and cook for 10 minutes until the potato is tender.

  • Squeeze in lemon juice and then act in a soft puree. Continue for a minute or two – you want the soup to be velvety.

  • Prove and adjust the seasoning as needed, then serve.

Grades

  • Use any variety of zucchini, marrow or pumpkin for this recipe – 1 kg of meat from any of them will have a delicious flavor.
  • If your marrow has a very hard and thick skin, you may prefer to remove it or pass the finished soup through a sieve.
  • If your marrow has interior caught with large seeds, remove it and use the firmer meat in this soup.
  • You can use Haricot butter beans or beans instead of Cannellini beans if you prefer.
  • Use light, medium or warm curry powder in your own taste, or gamed masala, if you prefer any heat.
